Summer Truffle Description:

Summer truffles are by now among the most known and appreciated around the world thanks to their easy availability. Black Summer Truffles (Tuber Aestivum) are ideal for canapés and first courses, meat and fish. They have a thicker skin than the black winter truffle, and are less pungent (and therefore less expensive!) than their winter cousins.

Black Summer Truffle resembles its winter cohort. Its flesh is brown to light brown also with white veins. Best if used fresh. Harvest season is May 1 to the end of November depending on weather conditions Because of its thicker skin, the Summer Truffle lasts longer than both the White and Winter Truffle and if properly kept will last for three weeks after harvest.

Use as a decadent accompaniment to your foie gras, or in something as simple as a well-prepared omelet.  It is possible with this truffle to use a touch of cold water when brushing clean but make sure to pat dry with a towel.  Now available preserved for your use year round.
SUMMER TRUFFLE PUREE

A very versatile item, Summer Truffle puree is composed of fine pieces of truffle mixed with olive oil.  Deploy this sauce with aplomb, directly from the jar or mix into finished dishes. Something as simple crostini or bruschetta spread with this salsa is sure to please the most discriminating and ravenous palettes alike.

SUMMER TRUFFLE SLICES

 Robust slices of Summer Truffle each approximately an eighth of an inch thick. Just open the can and add to your food creation.
